This training course provides an understanding of the practical application of the HACCP principles and the essentials of effective auditing. This will enable the candidates to obtain the necessary knowledge and skills to be able to undertake effective audits of HACCP systems. This will assist the candidate in implementing Food Safety and HACCP Management Systems documentation and ensuring it meets the organisations objectives.
It involves putting the candidates through a practical and effective auditors program.
This training ensures that all the practical assessments are completed and face to face assessments are undertaken to a satisfactory level. This course is designed to enable participants to understand, develop and implement an in house HACCP audit program. This program contains guidelines on setting up HACCP audit teams, conducting HACCP audits and documentation and reporting procedures.
The ‘HACCP Internal Auditor Training Course’ is carried out over two consecutive days with a final examination at the conclusion of the course. The course is a fully interactive multimedia course that will be presented in English.

The HACCP Internal Auditor Training course is composed of the following:

- What are PRPs and how to conduct a gap analysis for the PRPs?
- The HACCP System Principles and Application
- The role of an HACCP Audit Team
- Planning and preparing for an HACCP audit
- How to conduct an HACCP Audit from the beginning to completion
- Verification and Validation of the HACCP Plan
- How to document noncompliance’s and generate an HACCP Audit report
- Follow up of Corrections and Corrective Actions
Selection of Participants: All participants must be HACCP trained prior to attending this course.
